UNIAN will tell you how to make delicious zucchini cutlets, which zucchini dishes you can cook in the oven, and how to make simple zucchini dishes in a frying pan.

Cutlets of zucchini

  • zucchini – 2 pcs.;
  • sweet pepper – 1 pc;
  • eggs – 2 pcs.;
  • cheese – 150 g;
  • oatmeal – 0.5 cup;
  • flour – 3 tbsp;
  • spices and garlic to taste;
  • spices and aromatic herbs to taste.

Grate zucchini on a coarse grater, salt and leave for 10 minutes. At this time, chop the sweet pepper, herbs and garlic, and three cheeses on a coarse grater.

Squeeze the zucchini mass from excess juice. Add sweet pepper, herbs and garlic, cheese, eggs, oatmeal, herbs and aromatic herbs to the zucchini. Leave the mass for 10 minutes, so that the flakes become soft.

Add flour and mix. If the mass is liquid, add more flour.

Put the cutlets in a pan with a spoon and fry in a preheated pan until golden brown on both sides over low heat. After you turn the cutlets, cover the pan with a lid so that everything is fried well.

Zucchini with tomatoes and cheese in the oven

  • Zucchini – 2 pcs.
  • tomatoes – 2 pcs.
  • Bulgarian pepper – 1 pc.
  • Eggs – 1 pc.
  • Sour cream – 3 tablespoons
  • Milk – 2 tablespoons
  • Hard cheese – 30 g.
  • Salt and pepper to taste.

Cut the zucchini into rings, 0.5 centimeters thick. Bulgarian pepper and tomatoes also cut into rings.

Place the vegetables vertically in the chosen baking dish, alternating them among themselves: zucchini, pepper, zucchini, tomato, etc. Season the vegetables with salt, add ground black pepper.

Mix sour cream, eggs and milk, salt and pepper. Pour the prepared vegetables with this mixture. Grate the cheese on a medium grater and sprinkle the vegetables over it.

Put the form with vegetables in the oven at 180 degrees for 35-40 minutes or until golden brown.

Zucchini with chicken in the oven

  • Chicken legs – 7 pcs.
  • Zucchini – 1 pc.
  • Sour cream – 100 g.
  • Mustard – 1 tbsp
  • Turmeric – 1 tsp
  • Garlic – 3 cloves.
  • Salt, spices – to be allowed.

How to cook zucchini with chicken in the oven? In a large bowl, combine sugar and mustard. Add turmeric, salt, spices and crushed garlic.

Cut the courgette into squares of 2-3 cm and add to the marinade bowl. Add this chicken. Mix and leave to marinate for 1 hour.

Put vegetables with meat in a baking dish, cover with foil or a lid. Bake at 180 degrees for 45-60 minutes. 20 minutes before the end, remove the lid so the zucchini and chicken brown.

Zucchini with eggs in a pan

  • Zucchini – 1 pc.
  • Chicken eggs – 1 pc.
  • wheat flour – 2 tbsp
  • Vegetable oil for frying.
  • Ground black pepper and salt – to taste.

Cut the zucchini into circles no more than 0.5 cm thick. Mix the egg with salt and pepper. Sprinkle wheat flour on a flat plate.

Dip each piece of zucchini in the egg mixture so that it is completely covered. Then put the zucchini in a plate with flour and roll it on all sides.

Place zucchini in egg and flour batter in hot oil in a frying pan. Fry each batch of zucchini pieces over medium heat until golden brown, then flip and fry the other side as well. Oil should be poured so much that the pieces of zucchini are up to half in height.

Pancakes of zucchini and potatoes in a pan

  • Zucchini – 200 g.
  • Potatoes – 200 g.
  • More – 3 tbsp
  • Eggs – 1 pc.
  • Vegetable oil for frying.
  • Ground black pepper and salt – to taste.

Grate the zucchini on a medium grater. Drain the separated juice. Potatoes are also peeled and grated on a medium grater. Squeeze the potatoes lightly if necessary.

Combine potatoes and zucchini, add the egg and mix well. Salt, pepper, add flour and mix again.

Heat vegetable oil in a frying pan and fry small pancakes on both sides over medium heat until golden brown. Place cooked pancakes on paper towel to remove excess oil.

Zucchini dishes with minced meat

There is nothing easier than cooking zucchini dishes with minced meat. Keep a proven recipe.

Pancakes of zucchini and minced meat in a pan

For testing:

  • Zucchini – 400 g.
  • Chicken eggs – 2 pcs.
  • Baking soda + vinegar – 0.5 tsp
  • More – 5 tbsp.
  • Salt, pepper – to taste.

To fill in:

  • Chicken mince – 300 g.
  • Onion – 1 pc.
  • Salt, pepper – to taste.
  • Water – 50 ml.
  • Vegetable oil for frying.

Grate zucchini on a coarse grater. Salt the grated zucchini, stir, wait 10 minutes and squeeze out excess liquid. Add eggs, pepper and vinegar-slaked soda to the zucchini, mix. Add flour to zucchini and stir.

Put the minced meat in a separate bowl, finely chop the onion and add to the minced meat. Salt and pepper to taste. Add water to the minced meat for juiciness and mix.

Spread the zucchini dough with a spoon on hot oil, level it so that the pancakes are flat and thin. Put the minced meat on the zucchini pancakes, also smooth it. Lay more zucchini dough on top of the minced meat in a thin layer. Cover the pan with a lid and fry until brown and golden on both sides.

Note: zucchini dishes with minced meat are especially tasty and fragrant when garlic is added.
