There are many ways to cook baked potatoes. The most important thing is to find “your” recipe.
Baked potatoes – an easy-to-make and very tasty dish that many people enjoy cooking for lunch and dinner. Focus collected some of the most interesting recipes that even those who rarely appear in the kitchen can do.
Rustic potatoes (in a frying pan)
- potatoes – 650 g;
- Salt – 1/2 tsp;
- Ground black pepper – on the tip of a knife;
- ground paprika – 1/4 tsp;
- ground turmeric – 1/4 tsp;
- Vegetable oil (for frying) – 2-3 tbsp. l (30-45 ml).
Wash potatoes well with a brush. Dry the tubers with a towel. Cut potatoes in half. Then cut each half of the potato into 4 other wedges. Prepare the rest of the potatoes in the same way.
Sprinkle the potato wedges with salt, add black pepper, paprika and turmeric. Mix well so that the salt and spices are distributed over the potatoes. It is more convenient to mix the potato wedges with your hands.
Heat vegetable oil in a frying pan. Put the prepared potatoes and fry over a fire slightly above medium, stirring every 3 minutes, until the potatoes are fully cooked. This process will take about 20-25 minutes.
It is better to serve rustic potatoes, fried in a pan, immediately after cooking, until the crust is soft.
For those who like potatoes with scrambled eggs, during cooking, 5-7 minutes before the end of the process, drive a few eggs into the potatoes and mix.
Fried potatoes with sugar
- potatoes – 500 g (4 pcs.);
- onion – 80 g (1 pc.);
- Garlic – 4-5 cloves;
- Sour cream with a fat content of 20% – 120 g;
- Salt – to taste;
- Ground black pepper – to taste;
- vegetable oil (for frying) – 40 ml;
- Fresh dill (for serving) – 10 g (3-4 sprigs).
Peel potatoes, wash and cut into thin half circles or sticks. Pat the potatoes dry with a paper towel to remove excess water. Put it in a well-heated pan with vegetable oil. Fry the potatoes for 10-15 minutes over medium heat, stirring occasionally, until brown.
Measure onion and garlic. Cut the onion into thin slices, and the garlic into thin slices, add to the potatoes. Stir and fry everything together over medium heat for another three minutes.
Then you should reduce the heat to a minimum, cover the pan with a lid and cook the potatoes for 5-6 minutes, stirring occasionally, until soft. Remove the lid, sprinkle potatoes with salt and pepper, mix, add sour cream. Mix everything again and fry for another 2-3 minutes on low heat.
Sprinkle the boiled potatoes with chopped dill.
Ulanov-style fried potatoes
- medium potatoes – 1 kg;
- vegetable oil – 0.5 liters;
- Garlic – 1 head;
- Salt – a pinch.
Clean the potatoes and cut lengthwise into 4 pieces. If the potato is large, it can be sliced into 6-8 pieces. Pour vegetable oil into a cast iron cauldron. The original recipe uses unrefined vegetable oil (if you want, you can use refined).
Dip the chopped potatoes in heated oil and cook for 20-25 minutes until golden brown.
Peel the garlic and grind in a mortar with a good pinch of salt. If there is no mortar, pass the garlic through a press and then mix with salt. Add a little water and vegetable oil to the garlic puree to make a sauce.
Remove the cooked potatoes with a slotted spoon and let the oil drain. Then put the potatoes on a dish, pour over the garlic and cover for a few minutes to steam the dish.
Potatoes fried with meat or minced meat
- potatoes – 5-6 pcs.;
- Meat or minced meat – 300 g;
- onion – 1 pc.;
- Salt, pepper – to taste.
Cut meat into small pieces. Onion cut into half rings or cubes. Lightly fry the onion in vegetable oil, then add meat or minced meat. Fry for about 5 minutes until the released meat juice evaporates. Then add the sliced potatoes and keep everything together for about 20 minutes, stirring occasionally. Ready-made potatoes with meat, if you want, can be boiled with garlic and spices through a press.
Fried potatoes with lard
- potatoes – 1 kg;
- Pork fat or breast – 200 g;
- onion – 1 pc.;
- Greens – optional.
Cut the lard or brisket into cubes. Pour some oil into a frying pan and heat it. Fry the pork in a pan so that the fat is removed, but do not fry to the state of crackling. When the lard is a little brown, add the snow potatoes. Cut the onion into cubes, add to the potatoes with bacon and continue frying until the potatoes are ready. At the end of cooking, salt and sprinkle with chopped herbs.
