The New Year’s table will not do without meat dishes, which, as a rule, are the first to be swept by the guests. We offer you a recipe for a delicious home-style boiled pork, which can be served as a hot dish, or as cold cuts for a festive treat.
Ingredients for boiled pork
- Meat (pork, beef) – 1 kg
- Water – 1 liter
- Salt – 1 tbsp. l.
- Sugar – 0.5 tbsp. l.
- Coriander – 1 handful
- Bay leaf – 1-2 pcs.
- Allspice – 6 peas
- black pepper – 12 peas
- Carnation – 1 bud
To grease the crazy pork from above:
- Green bay leaf – 1/3 tsp
- Paprika – 1 tsp
- Coriander – 1 tsp
- Black pepper – 1 tsp.
- Garlic – 2-4 cloves (it is better to replace 1 tsp dried garlic)
- Vegetable oil – 2 tbsp. l.

Step by step cooking
Add salt, sugar, coriander, bay leaf, allspice and black pepper, cloves to the water. Put the fire and let it boil for 5-10 minutes.
Cool the marinade completely to room temperature. Put the meat in it and leave it in the fridge for at least 8 hours, and preferably a day.
Remove meat from marinade and pat dry with paper towels.
Mix paprika, coriander, black pepper and crushed garlic. Rub the meat all over with this mixture. Tie the meat with a thread or ribbon that goes into the sleeve.
Put the meat in the sleeve, fasten the edges on both sides, pierce the sleeve. Bake at 180 degrees for 1 hour and 20-30 minutes.
Let the cooked meat rest for 15-20 minutes, then you can remove it from the sleeve. The ham can be eaten hot or cold. If cold, boiled pork can be very thin slices for cold cuts or sandwiches.
