The Ukrainian pastry chef Lisa Glinskaya offered four pumpkin desserts to subscribers. The chef predicted on her Instagram that these pumpkin dishes will become a favorite.

Pumpkin pie

Ingredients

  • 300 g pumpkin (finely grated);
  • 200 g of eggs;
  • 130 g butter (soft);
  • 130 g of sugar;
  • 170 g of flour;
  • 10 g baking powder;
  • peel of one orange or grapefruit

Cooking

  1. Put the softened butter in a bowl. Stir with a whisk until smooth.
  2. Grate orange or grapefruit peel there. Stir.
  3. Add sugar and eggs. Stir again.
  4. Combine flour with baking powder and add to the egg mixture. Mix everything well.
  5. Grate the pumpkin on a fine grater and add to the dough. Stir.
  6. Take a shape and grease it with butter, then sprinkle with a thin layer of flour.
  7. Pour the dough into the mold and smooth it out.
  8. Send to the oven for 180 degrees for 30-40 minutes. Check the doneness with a wooden skewer.
  9. Set the cake aside to cool completely.
  10. Sprinkle with powdered sugar before serving.

Ingredients

  • 200 g pumpkin puree;
  • 250 ml of milk;
  • 150 g of eggs;
  • 30 g of sugar
  • 30 ml odorless vegetable oil or butter;
  • a pinch of salt;
  • 80-100 g flour.

Cooking

  1. Peel pumpkin, cut into small pieces.
  2. Cook in water over medium heat for 15 minutes. Pumpkin should be soft.
  3. Puree the pumpkin with a blender until smooth.
  4. Mix eggs with sugar, pumpkin puree.
  5. Add flour, salt, mix until smooth.
  6. Add warm milk, stir, then add warm butter and stir again.
  7. Pour the batter into the hot pan and fry the pancakes on one side.
  8. Spread half of the pancake in a frying pan with a thin layer of butter, cover with the second half, transfer to a plate.

Ingredients

  • 300 g cottage cheese (fat content of 5%);
  • 100 g of sugar (fat content 15%).

Cooking

  1. Mix cottage cheese and sour cream with an immersion blender until smooth.
  2. Put the filling on the pancakes without rolling them out and roll them into a tube.

Ingredients

  • 150 g of butter;
  • 100 g of sugar;
  • 100 g of eggs;
  • 250 g of flour;
  • 10 g baking powder;
  • orange peel;
  • 200 g grateful pumpkin;
  • 50 g frozen berries (blueberries, blackcurrants, raspberries).

Cooking

  1. Beat softened butter until light and fluffy.
  2. Add orange peel and sugar, beat again.
  3. Add eggs, stir.
  4. Add flour with baking powder and mix again. The flour should be moist.
  5. Add grated pumpkin and stir.
  6. Turn the oven to 180 degrees.
  7. Add the berries to the dough, mix.
  8. Divide the dough into shapes, filling them halfway.
  9. Send to bake in a preheated to 180 degree oven for 25-30 minutes.
  10. Check the doneness with a wooden skewer.
  11. Remove the finished cupcakes from the mold and sprinkle with powdered sugar.

Turkish pumpkin

Ingredients

  • 1 kg pumpkin (peeled);
  • 500 g of sugar;
  • cardamom (can be cinnamon or star anise);
  • walnuts.

Cooking

  1. Peel the pumpkin, cut into pieces and place on the bottom of the pan.
  2. Sprinkle pumpkin with sugar and add spices.
  3. Cut a circle out of parchment paper and cover the pumpkin with it.
  4. Put the pan for two hours, the pumpkin should start the juice. Put the pan on the stove, the temperature should be slightly below average. Cook the pumpkin for about an hour. It should be soaked in syrup.
  5. Place pumpkin on a plate and sprinkle with chopped walnuts.
