Beautifully served dishes can be a real decoration of the party. But not everyone knows how to make cold cuts so that it looks like the eye. Let’s talk about the basic rules for design.

The name of the snack already determines its composition. Several varieties of sausage are served together – boiled, dry cured, semi-smoked, such as ham, carbonade, brisket, meat balyk, boiled pork. You can have more rare meat delicacies on the plate, such as beef carpaccio, meat or poultry rolls. You can complement the taste of sausages with a variety of greens, parsley, dill, onions or vegetables. Cucumbers, tomatoes, radishes, sweet peppers, cranberries are excellent for this purpose.

You should not use fresh vegetables. Pickled olives, olives, cherry tomatoes, gherkins, garlic, wild garlic, green peas are also suitable. The most important thing is not to mix fresh and salty food on the same plate. According to serving etiquette, stacked slices should not go beyond the edges of the dish, so select the appropriate sized dishes in advance. Before serving, you need to prepare meat delicacies by dividing them into slices. The appearance depends on the initial shape of the product. Pre-clean sausage is cut straight or diagonally. In the first case even rings are obtained, in the second, somewhat elongated, oval. Brisket is served in small slices, or in the form of wide strips, without cutting off the skin.

To make our finished cuts look beautiful, you need to correctly place the prepared pieces on a dish. This can be done in two ways: in a circle or from the center to the edges. In the first case, the slices are arranged in different layers, each of which consists of meat products of the same type. In the second, the pieces are laid on top of each other in sectors, following from the center of the dish to the edges. By the way, you can leave gaps between them, which are then filled with vegetables and herbs.

The choice of dishes for cold cuts is determined by the general style of the table decoration. If traditional ceramic dishes are used, a plate for sausage and cheese can be made of transparent glass of a suitable color. Prefer the rustic style with its simple shapes? Then place your cuts on a round wooden board designed for serving cheese.

Mistresses often put cheese and meat products on the same dish. On the one hand, this is not accepted by the rules, on the other hand, diluted in slices with pieces of cheese looks very elegant. It is impossible to imagine the New Year’s table without the usual favorite dishes. But I also want something new. Today we offer recipes for salads, appetizers and hot. Cooking dishes is not difficult at all, while they become a decoration of the table. You will have to spend a little on groceries, but this is a holiday!

What to do. Let’s prepare the products. It is better to take the breast chilled, it will be tastier and softer. Pineapple can be taken all canned rings or slices. If fresh, then very ripe. The sweetness of pineapple is one of the features of the dish. Take your favorite cheese. Mayonnaise can be used at home.

First you need to boil the breast. To do this, boil water and dip the chicken in it. This is done so that all the juices remain in the meat and do not go into the broth, as happens when cooking in cold water. Cook the breast for 30 minutes. In the process, add salt. Then take it out and cool it down.

We cook hard-boiled eggs. We put the dishes with eggs on the fire, wait for the swelling and cook for 10 minutes. Leave to cool in the same water. Eggs cooked this way will remain soft, but well cooked.

We cut the completely cooled breast first into longitudinal pieces, then into strips and into cubes.

Chop the eggs finely.

Cut pineapple into cubes. Try to keep all the components of the salad cut in approximately the same pieces. It will not only be beautiful, but also delicious. Walnuts must first be properly sorted, so that the shells and shells do not come across. Then we chop them with a knife.

We grate the cheese on a large grater.

Put all the salad ingredients in a bowl. Stir, taste for salt. If necessary, we add.

Dress the salad immediately before serving. Salads with mayonnaise spoil quickly, it is better not to store them.

To decorate the salad in the shape of a Christmas ball, take dill, pomegranate seeds and corn. Arrange the salad on a plate. Lightly spread with mayonnaise. Sprinkle with finely chopped dill. Lay out the grain pattern. It will be easier to do this if you first draw it with thin strips of mayonnaise. From foil and dill make the base of the ball.

Breasts baked with mushrooms and cheese

chicken breasts – 350 g

mushrooms – 100 g

tomatoes – 2 pcs.

onion – 2 pcs.

hard cheese – 70 g

mayonnaise – 3 tbsp. spoons

vegetable oil – 20 ml

salt, spices – to taste

What to do. Prepare all the necessary ingredients. First, peel the onion, rinse it in cold water, then chop finely. Wash mushrooms, peel and cut into pieces. Pour some vegetable oil into a frying pan and heat it. Put the chopped onion and mushrooms in the pan. Fry everything together for three to four minutes. Stir occasionally so nothing burns. Mushrooms can be a little salty.

Cut the chicken breast lengthwise to make large pieces. Beat each a little with a kitchen hammer. It is not necessary to beat hard, because chicken meat is very soft and easily damaged.

Line a baking sheet with parchment paper and lay out the chicken pieces. Smear each slice with mayonnaise. Sprinkle them lightly with salt and spices such as paprika. Then add the fried mushrooms.

Wash the tomatoes and cut into thin circles. Spread the chopped tomatoes over the mushrooms.

Grate the cheese and sprinkle it over the chicken breasts (you can add the cheese when the chicken is almost ready). Put the baking sheet in the oven, preheated to 180 degrees, for 40 minutes.

Juice will come out of the chicken as it cooks. The cheese will melt on the surface and brown a little. Remove the cooked breasts from the oven, transfer to a dish and serve.

Snack “Black Pearl”

puff pastry – 500 g

squid, carcass – 1 pc.

eggs – 2 pcs.

hard cheese – 50 g

olives – 6 pcs.

red caviar – to taste

mayonnaise – 2 tbsp. spoons

What to do. Defrost squid, shell, boil in salt water, cut into strips. Boil eggs, chop finely. Grind the cheese on a grater. Mix all the ingredients, season with mayonnaise.

Defrost puff pastry, it is not necessary to roll it out.

Use a cookie cutter to cut shapes out of the dough. On one side, press the dough well so that this side does not rise during baking, make shallow notches on the upper part, imitating a shell pattern.

Put the whites on a baking sheet and bake in the oven at a temperature of 180 degrees for 10-15 minutes. Take the shells out of the oven, cool. If they do not open during baking, carefully make cross cuts with a knife, leaving one side intact.

Fill the shell with salad, put an olive in the middle and garnish with caviar.
