There are dozens of recipes for dumplings in Ukrainian cuisine, we wrote how to make them with cabbage. Yevgeny Klopotenko offers a somewhat unexpected dressing for them – minced meat with frozen cherries. Make sure it is very tasty.

It must be said that cherries are not always used for their usual purpose in Ukrainian cuisine. For example, in the Vinnitsa region, fresh berries are added to borscht.

The dough does not need to be rolled out.that’s convenient. Just break it into small parts and drop in boiling water. The berries are pre-dehydrated, the juice is drained. The proportions are as follows: 500 grams of minced meat per 400 grams of cherries.

Dough Ingredients:

  • 400 g of flour;
  • 250 ml kefir;
  • 1 egg;
  • ½ teaspoon of salt;
  • 1 pc. l. Sahara.

For refueling:

  • 500 g of a variety of minced meat;
  • 400 g frozen cherries;
  • ½ tsp ground coriander;
  • ½ cup sugar;
  • 2-3 tbsp. l. sunflower oil;
  • salt pepper.

How to cook:

  1. For the dough, mix in a bowl 400 g of flour with 250 ml of kefir, 1 egg, 1 tbsp. l. sugar and ½ tsp. salty Knead a soft dough, it should not stick to your hands.
  2. Boil water in a large pot, add some salt. Shake small pieces of dough and licorice in boiling water. Cook for about 2 minutes.
  3. Add a little sunflower oil to the finished dumplings so they don’t stick together, cover with a towel.
  4. For dressing, fry 500 g of minced meat in a pan with 2-3 tbsp. l. sunflower oil. Salt and pepper to taste, add 1/2 tsp. ground coriander. Simmer until the minced meat is ready.
  5. 5 minutes before the minced meat is ready, add 400 g of pre-thawed spicy cherries and a little of their juice.
  6. Add the cooked dumplings to the pan and simmer all together for 1 minute. Serve with sugar.
