Shepherd’s Pie: a recipe for a traditional English mixed potato casserole

This 18th century dish was a traditional way to save leftovers from a big Sunday dinner.

The combination of meat and potatoes is one of the most loved of all time around the world. Not only beef is suitable for this cake – originally shepherd’s pie was made from lamb or lamb, you can also use pork if you like it more.

Ingredients

For filling

  • oil – 1 tbsp. l.
  • bulb – 1 pc.
  • celery – 2 stalks
  • carrots – 2 pcs.
  • garlic – 4 cloves
  • ground beef – 500 g
  • flour – 2 tbsp. l.
  • tomato paste – 2 tbsp. l.
  • red wine – 0.5 tbsp.
  • chicken broth – 1 tbsp.
  • peas – 1 tbsp.
  • Worcestershire sauce – 1 tbsp. l.
  • thyme – 1 tsp
  • rosemary – 1 tsp
  • parsley – 1 tsp

For mashed potatoes

  • potatoes – 1 kg
  • bay leaf – 1 pc.
  • butter – 0.5 tbsp.
  • milk 1 tbsp.
  • salt and pepper to taste

For cheese crust

  • parmesan – 2 tbsp. l.
  • butter – 2 tbsp. l.

Cooking

Ground meat

Preheat oven to 200 degrees.
Cut the carrots and celery into cubes, chop the onion and garlic. Heat oil in a large pan over medium heat. Fry the onions, carrots and celery and cook for 3-4 minutes, or until the vegetables are golden brown and slightly tender. Add garlic and cook for another minute. Add ground beef and cook until no longer pink. Add flour and tomato paste and cook for 1 minute. Pour in the red wine, then add the chicken stock, peas, Worcestershire sauce and fresh herbs.
Remove from heat and transfer everything to a greased form.

Mashed potatoes

Prepare mashed potatoes. Peel and cut the potatoes into large pieces. Put the potatoes in a large pot together with the bay leaf and cover with cold water. Sprinkle with salt and bring to a boil. Simmer for 15-20 minutes, or until potatoes are tender. Drain the water and put back in the pot. Remove bay leaf. Add butter and milk and mash potatoes until smooth and lump-free. Add salt and pepper to taste.

Cake

Spread the mashed potatoes over the mixture. Top with and sprinkle with parmesan cheese and butter.
Bake for 20 minutes, or until the top is golden brown.
