Simple and not so simple. Three recipes for the breakfast of paprika eggs

Chukan pepper is what the Bulgarians call Bessarabia, whose ancestors brought sweet pepper to these parts. And the seeds, and the traditions of their cultivation and processing for food, and herbs. Until now, in the villages, the housewives carefully keep traditions – the seeds of each harvest are collected only from the best peppers, grown in gardens by hand, and after harvesting they are dried in the sun and crushed in mortars No compromises, blenders and electric dryers.

With such a world-class treasure as the traditional Bessarabian paprika nearby, we just have to introduce it to every Ukrainian. Next, I will describe three simple and not so easy breakfasts of eggs with paprika. To do this, we need fresh chicken eggs, a pot of Bessarabian paprika and some available products.

Breakfast Number 1. Level – beginner. Fried eggs with paprika

You should fry the eggs in butter over very low heat – at least. Yes, it takes a little longer, but the result is worth it. It is important to get a yellow liquid yolk, and the egg white is not burnt, completely white. What else distinguishes a decent scrambled egg? Protein should not be rubber”, overcooked. It is this type of scrambled eggs that should be salted and sprinkled with Bessarabian paprika. All! This is already a wonderful dish with the local flavor of the south of Bessarabia. I recommend supplementing it with fresh vegetables and eat with soft white bread, soak the yolk with paprika.

Breakfast Number 2 . The level is amateur. Summer vegetable shakshuka.

Shakshuka can be prepared locally in 20-25 minutes. This is practically an analogue of our Bessarabian manji. How to cook?

You need:

  • 2-3 tomatoes
  • 1 bulb
  • 1 red pepper
  • 1 medium eggplant
  • Bessarabian paprika
  • Salt, pepper, vegetable oil.
  • 4 eggs for breakfast for two

You will also need a large frying pan and, as I said, 20-25 minutes. Go!

You need to act fast, you are no longer a beginner. Pour vegetable oil into a frying pan and place on medium heat. While the oil is heating up, you should have time to chop the onion. Cube 5 mm. We send the onion to the pan and start cutting the pepper. It can be cut larger – a cube of about one and a half to two centimeters. By this time, the onion should be translucent and begin to soften a little turn golden.” Throw in the pepper and continue cooking. Let’s not forget to stir.

Let’s start by cutting the eggplant. Just like peppers, and as soon as they cut, we throw them in the pan. We stir. And an important nuance: if it burns, add water or tomato juice slowly. So the vegetables will start to stew. After the eggplant has started the juice, we throw in the tomatoes. If you throw, do not forget salt and add a teaspoon of Bessarabian paprika. The consistency should not be too thick, adjust this moment with the amount of added liquid.

And the next step is to make 4 indentations in the shakshuka manja with a spoon and beat the eggs into them. Now you can cover with a lid and leave for 3-4 minutes. If there are greens, chop parsley or cilantro into shakshuka. If you like spices, add whatever you like. If you are a fan of spicy taste, you can use as many chili peppers as you like. The main thing is that although this breakfast takes longer to cook than scrambled eggs, there is nothing complicated about it.

Breakfast number 3. Level – pro. Poached eggs with Bessarabian paprika sauce.

Breakfast will require a little more time and attention. You should wake up about 30-40 minutes earlier. But believe me, the one or the one for whom you prepare such a breakfast will be happy. What do we need for breakfast for two?

Prepare 4 poached eggs and hollandaise sauce. Toast two fairly thick slices of your favorite bread in a pan with butter. If you have a silpo buckwheat baguette, I understand you.

Fry 200 g of spinach in a pan with olive oil, lightly salt and sprinkle with lemon juice. Spinach will reduce in size several times.

Then everything is simple. In hot (Yes, this is important!) Place the bread on a plate. Spread spinach on toasted bread. Spinach – poached eggs. Sprinkle them with Hollandaise sauce. And sprinkle all this with a good bit of Bessarabian paprika. As soon as you see this combination of colors – yellow, green, red – you will already feel delicious. Yes, such a breakfast requires a little more time and attention, but it is not difficult at all.
