Zucchini carpaccio with truffle dressing and rocket
In itself, carpaccio is not a dish, but a way of cutting. Mainly meat, fish, seafood. But fasting dictates strict rules, so in this case tender young zucchini carpaccio is a great alternative to the traditional version. Put thin slices of zucchini on a pillow of your favorite greens, and top with some sun-dried tomatoes and pine nuts. Season the dish with a mixture of truffle and olive oil, soy sauce and a drop of lemon juice.
Beet salad with oranges
The combination is atypical, but very refined. Cook the beets until soft and cut into small pieces. Peel the orange from the peel and veins and cut it too. Season all this with a mixture of olive oil, a drop of soy sauce and ground walnuts. Top with small slices of tofu cheese. By the way, a life hack – you can skip beets with cheese in a blender by adding a small amount of vegetable broth. You get a light fresh soup with the same taste.
Rice porridge with caramelized banana and rosemary
An ideal variation of a lean breakfast with minimal body movements. The simplest traditional porridge here is not with animal milk, but with vegetable milk (coconut or soya). Separately, bananas are fried until brown in a small amount of sugar. And all this is dressed with a simple but effective rosemary syrup. To make it, take 100 milliliters of water, 200 grams of white sugar and a few sprigs of rosemary. Simmer for 20 minutes, strain and cool. The same sauce, by the way, is also ideal for low-fat cottage cheese or yogurt in the morning.
Cabbage steak with apple curry
In the modern sense, a steak is not just a thick piece of fried meat or fish. This can be called a dish of any product baked to a crispy crust and retaining juiciness inside. And the cabbage here is an absolute favorite. Cut the head of cabbage into slices 2-3 centimeters thick, brush with olive oil, add salt and put in the oven for 40 minutes at a temperature of 200 degrees. For the sauce in a pan, simmer the apples, add a little curry, your favorite spices to taste and beat with a blender. Serve the finished dish with hot ground pepper and finely chopped herbs.
Strawberries with pepper
For those who are tired of the typical menu and of course not afraid of experimentation. We are used to the fact that strawberries are always used only in desserts, but in fact they have much less sweetness than acids. This is easy to check: close your eyes and try raspberries first, and then strawberries. You will taste sweet first and then sour. This strawberry tart goes well with ground pepper. And if you season it all generously with salt, you get one of the best appetizers for a buffet table.
