Zucchini and pumpkin recipes: original and delicious

A new look at the usual zucchini and pumpkins is offered by the website of the Aero-City newspaper. Correspondent Tatyana Sushentsova studied and chose the most original recipes. Instead of boring stuffed zucchini, we recommend preparing a meat casserole, and instead of mushrooms, roll up zucchini with an unusual “mushroom” taste for the winter.

Meat casserole from zucchini

We will need: 600 g of minced meat, 400 g of mushrooms, 350 g of onion, 2 peppers, 1 kilogram of zucchini, 300 g of cauliflower, 300 g of hard cheese, 2 eggs, 4 tablespoons of sour cream 20%, salt and spices for meat taste.

Coarsely chop the mushrooms, add the minced meat, salt (half a tablespoon), sprinkle with herbs for meat (one tablespoon) and mix. In a baking dish greased with vegetable oil, lay half of the onion, cut into half rings.

Top with sliced ​​paprika. The next layer is cabbage disassembled into inflorescences. Salt the cabbage a little. Put the minced meat with mushrooms on top and another layer – the second part of the onion, cut into half rings. Cut the zucchini into circles, sprinkle with Adyghe salt (one tablespoon), mix.

Cover all layers tightly, stacking cups on top of each other. Top with a mixture of two eggs (raw) and sugar. Grate half of the cheese over the zucchini. Put the mold in a preheated oven to 180 degrees. After 40 minutes, grate the second part of the cheese on top and bake for another 10 minutes. Allow to cool slightly before serving.

Zucchini like mushrooms

We will need: 2 kg of small zucchini, 1 head of garlic, 50 g of rock salt, 125 g of sugar, 125 ml of table vinegar 9%, 1 tablespoon of ground black pepper, 1 bunch of parsley, 1 bunch of dill.

Cut the zucchini in half lengthwise and cut into half circles. Add salt, sugar, pepper and vinegar to the zucchini. Mix. Finely chop dill and parsley. Mix with zucchini. Let the zucchini marinate for an hour, stirring every 15 minutes. Transfer the zucchini to sterilized jars, catch the released juice, pinch tightly. The top layer can be pressed down with your hands.

From this amount of zucchini get four liter pots. Cover the jars with sterilized lids, immerse them up to the shoulders in water and heat the water to a boil. After 5 minutes bubbles will appear in the glasses, from this point boil the workpiece for 15 minutes. After sterilization, screw on the lids and turn the jars upside down. Leave until cool. Serve on its own or with warm potatoes.
