Zucchini goes perfectly with any minced meat. They remain juicy, absorb the aroma of garlic in the cooking, which is set by the creamy taste of cheese. Zucchini with minced meat in the oven is very simple and quick to cook.
The delicate texture of zucchini has only one drawback – not a very expressive taste. On the other hand, you can combine the vegetable with literally all other products. Zucchini is used to make soups, vegetable stews, casseroles, jams and even compote. A little grated pulp of the fruit in the cutlet makes it juicy and soft. Zucchini is easy to bake in the oven. In combination with minced meat, tomatoes and cheese sauce, they become an elegant and light dish that can also be served on the festive table.

1. Prepare the vegetables
Wash young zucchini and tomatoes with cold water. Peel the onion and garlic. Instead of fresh garlic, you can dry (1.5 tsp).
Remove the stem and tip from the zucchini. Cut the zucchini crosswise into circles of 2 cm thick. Remove the center with seeds from each circle. Cut the tomatoes into 5 mm thick slices. Cut the onion into quarters, add it to the minced meat.
2. Make mixed meat
Pass beef and lean pork twice through a meat grinder. At the end, chop the onion, 4 cloves of garlic and the zucchini pulp previously extracted. Season the minced meat with salt and half black pepper, mix well, beat a little.
3. Prepare the zucchini sauce
Grate the mozzarella. Instead, you can use any low-melting cheese. Combine it with sour cream, add chopped garlic and the remaining black pepper. Mix all the ingredients with a spoon.
4. Stuff the zucchini
Turn on the oven at 200 °C (bottom and top heat). Grease a clean and dry baking sheet with 10 g of vegetable oil. Arrange the prepared zucchini rings on top. In the middle of each ring place a ball of minced meat (1.5-2 tablespoons) and press lightly with your hand. Put a circle of tomato on top of the meat filling, cover it with cheese and sour cream sauce.
5. Bake the zucchini
Send the prepared zucchini to the middle shelf of the oven. Bake them for 40 minutes at 200 ° C. Let the cooked zucchini cool a little, then arrange on napkins and garnish with dill. Optionally, you can serve a side dish with zucchini – boiled rice or mashed potatoes.
